Method

Heat the oven to 200°C fan. Toss the potatoes with half the oil and a good pinch of salt, spread them out in a roasting tin and roast for 20 minutes.

Push the potatoes to one side. Add the broccoli and garlic, and sit the salmon on top with the lemon slices. Drizzle with the rest of the oil and season.

Roast for 10 to 12 minutes, until the salmon flakes when you press it with a fork.

Squeeze over the remaining lemon. If you like, whisk the mustard into any juices in the bottom of the tin and spoon it over.
