Method

  1. Cook the noodles to the packet instructions, throwing the broccoli in for the last 3 minutes. Drain, keeping a mugful of the water.

    About 8 minutes

  2. Whisk the peanut butter, soy sauce, lime juice, garlic, ginger, chilli and maple syrup together with 4 tablespoons of the noodle water until it is a smooth, pourable sauce.

  3. Toss everything together, loosening with more of the noodle water until the sauce coats rather than clings. Top with spring onions and sesame seeds.
