Method

  1. Heat the oven to 200°C fan. Toss the squash with 2 tablespoons of oil, the cumin and plenty of salt. Roast for 30 to 35 minutes, turning once, until caramelised at the edges.

  2. Meanwhile, simmer the lentils in plenty of unsalted water for 22 minutes until tender but not collapsing. Drain well.

  3. Put the onion in a bowl with the vinegar and a pinch of salt while everything else cooks. It will turn pink and lose its bite.

  4. Fold the warm lentils through the onion and its vinegar with the last tablespoon of oil. Add the squash, rocket and parsley, and scatter over the feta and seeds.

Tinned lentils work if you are short of time: drain and rinse two tins and skip step two.
